"My goal as a coffee producer is simply to bring you joy." This is how Chalo Fernandez describes his vision. But the care and precision he shows clearly shows that Chalo loves the process as much as the result.
 
The lot The bottom is a prestigious plot of land in Finca Las Palmas where Castillo plants are grown. The cherries are picked by hand, washed and fermented for 36 hours. This process allows the coffee to develop its sweetness and pleasantly increase its green apple acidity.
